PC BEETS Cocktail Recipe

  • .5 oz. Fresh Lime Juice
  • 4 oz. Ginger Beer
  • ½ tsp fresh grated Ginger
  • ¼ tsp fresh Lime Zest

Rim your martini glass with Beet Ginger Sugar. Pour Beet Puree in bottom of martini glass. Shake vodka and lime juice in cocktail shaker, than add ginger beer and give a slight swirl to combine. Pour over the back side of a spoon above the beet puree to create a color variation layer. Zest fresh ginger and lime on top, garnish with a fresh lime wheel & beet sugar straw.

Beet Puree

  • 3 Medium Beets
  • 2 Tb. Agave
  • 1 Cup Water

Boil beets for approximately 45 minutes until fork tender and peel. Blend all above ingredients in vita-mix or similar blender.

Beet Ginger Sugar

  • ¼ Cup Candied Ginger
  • 2 Cups Sugar
  • 3 small Drops Beet Juice

Blend candied ginger in small coffee grinder until it works into a very fine powder. (*If you are having trouble getting ginger to the right constancy without clumping together let it dry out overnight unsealed, also add some regular sugar while grinding) Mix with sugar and beet juice and shake in a container with a lid. Let mixture dry for 24 hr.

Beet Sugar Stir Straw

  • 2 Cups Sugar
  • 1tsp Freeze Dried Beet Powder (or a couple drops red food coloring)
  • Parchment Paper

Melt sugar in small pan over medium heat while stirring constantly. Add in freeze dried beet powder when completely melted. With a small spoon pour melted sugar onto parchment paper in 5 inch squiggles to make a unique stir straw.
